Fermentation Operations Bylaw Fees

The Fermentation Operations Bylaw requires that administration and treatment fees be paid. Fermentation operations must pay their annual fees by the due date specified on their invoice. If fees are not paid within 90 days of the due date, then that Operation is prohibited from discharging wastewater generated from the fermentation process to the sewer until all fees are paid in full.

Administration fees

Operators are required to pay an annual administration fee of $200 in order to cover the costs of regulating fermentation operations under this Bylaw.

Treatment fees

All fermentation operations producing 250 hL of liquor per year or more are required to pay an annual fee to cover the costs of treatment and conveyance of wastewater discharged to the sewer. The annual treatment fee is the sum of all of the treatment fees that are applicable to each type of fermentation operation on the premises. Each treatment fee is determined using the following formula and fee table, for each calendar year:

(total production (hL) for that type of fermentation operation, as specified in Column 1)X
(unit rate ($/hL) applicable to that type of fermentation operation, as specified in Column 2)
Column 1

Distillery$0.282
Winery$0.376
Cidery$0.376
U-Vin$0.142

Note: Fermentation operations producing less than 250 hL of product in the previous calendar year are exempt from paying treatment fees.
